Ol' Bart BBQ Sauce

Glazed BBQ ribs with dipping sauce

•  15 ounces sliced onions
•  6 ounces beef tallow
•  7 tbs minced garlic
•  2.2 ounces salt
•  .8 ounces black pepper, white pepper, cumin, mustard seasoning, paprika
•  86 ounces brown sugar
•  11 cups apple cider vinegar
•  2 and a half cans of ketchup
•   cups Worcestershire sauce

Directions:

Weigh out and measure all ingredients in separate containers. Put a large pot on the burner. Turn the burner on medium.

Put beef tallow and onions into the pot. Once the onions turn translucent add the garlic. Once the garlic has cooked and browned slightly, add the brown sugar by pouring half of the brown sugar into the pot and mix until it has melted, then add the rest of the brown sugar and mix until it has all melted down again. Add the apple cider vinegar, mix until all the brown sugar has dissolved. Add all the spices and mix. Let this cook for a couple minutes. Add the ketchup and mix. Let the sauce cook for about 5 mins. Turn the burner off. Add the Worcestershire sauce and blend the sauce using the immersion blender until all the onion slices have been fully blended. Put into buckets and let the sauce cool down to room temp. Lid, date, and put in the fridge.
